Pistachio Crab Florentine Couscous (8 - 10 servings)

 

INGREDIENTS: 

2/3 Cup of couscous
½ cup of water
4 Tblsp. butter
1/3 cup of chopped pistachios
1 tsp. thyme
2 tsp. dill weed
2 tsp. minced garlic
3 tblsp. diced red onion
4 tblsp. lemon juice
3 tblsp. sugar
½ tsp. salt
¼ cup olive oil
1 can (16 oz.) of drained crap meat (Costco Phillips crab meat)
1 cup of spinach, finely chopped
black pepper

Bring the water to boil.  Stir in the couscous.  Let it rest for 5 minutes.

Meanwhile, melt the butter in a fry pan over medium low heat and lightly fry the pistachios till slightly toasted.  Add the couscous, thyme, dill weed, and garlic.  Sauté till the couscous flakes.  Remove from the heat.

Stir in the chopped onions.  Mix in the lemon juice, sugar and salt.  Stir in the olive oil till well blended.  Add the crab and spinach.  Season to taste with black pepper.  Refrigerate.  Serve on a bed of mixed greens.
