Easy Microwave Fudge
½
cup butter or margarine
2 cups white sugar
1 can (5 oz.) evaporated milk
2 cups miniature marshmallows
6 oz. pkg. (1 cup) semi-sweet chocolate chips
½ tsp. vanilla
½ cup nuts chopped, optional
Line 8x8 inch baking pan with heavy foil, extending foil over edges of pan. Rub a dab of butter lightly over foil. Place ½ cup butter into 2.5 quart non-metal bowl. Microwave on high loosely covered for 1 minute to melt completely. Add sugar and evaporated milk, stir well until blended. Microwave on high for 9 minutes, stirring every 3 minutes. Remove bowl from micro. Add marshmallows, chocolate, nuts and vanilla. Stir VERY QUICKLY AND VIGOROUSLY, until marshmallows have melted. Quickly turn fudge into prepared pan. While still warm, score into 1 inch squares. Cool to room temperature and then chill for several hours until firm. Lift foil out of pan and cut fudge into squares.
Yield : about 25 pieces
Note: This recipe literally takes only 15 minutes to prepare once you have measured all your ingredients. It is important to work quickly in pouring the fudge into prepared pan as it will harden quickly.
