Double Chocolate Cake

Makes 8 servings.
Preparation time:  10 minutes
Cooking time:  35 - 40 minutes

It would be a stretch to call this Italian, but it's one of Lido's favorite desserts.  And it couldn't be easier - you don't even have to dirty up a dish except the one it's baked in.  Now it's a favorite of ours, too.

1 2/3 cup all purpose flour
1        cup granulated sugar
¼    cup unsweetened cocoa
1         teaspoon baking soda
½     teaspoon salt
1         cup water
1/3     cup vegetable oil
1          tsp. vinegar
½      tsp. vanilla
½      cup chocolate chips

Preheat oven to 350 degrees.  In an ungreased 8X8X2 inch pan, mix flour, sugar, cocoa, baking soda & salt.  Add water, oil, vinegar and vanilla and stir to combine.  Sprinkle chips over batter.  Bake for 35 - 40 minutes, or until a toothpick inserted in center comes out clean.

Per serving:  234 calories (percent of calories from fat, 34), 4 grams protein, 53 grams carbohydrates, 2 grams fiber, 12 grams fat, no cholesterol, 305 milligrams sodium.
