Butter Tarts

 

Pastry of choice, rolled thinner than for a pie.

1 Cup sugar
½ stick of butter
 

Cream the sugar & butter thoroughly.

Add:
1 egg
1 cup of raisins
2 Tblsp. lemon juice OR 1 Tsp. vanilla

Mix (... I usually make a lemon batch and a vanilla batch and mix them together).

Bake at 375F for approximately 12 minutes
