Asparagus wrapped in Roast Beef
Cook asparagus until just tender. (Or microwave about 2 minutes). Let cool.
Mix:
Cream Cheese (approx ¼ cup)
Dijon mustard (approx 2 tsp)
Horseradish (approx 1 tsp)
You can change proportions to suit your taste.
Spread a small amount of the cream cheese mixture onto a slice of roast beef. Roll the beef around an asparagus spear. Repeat until you run out of something!
You can use this recipe with whichever cold cut you like. Change the cream cheese mixture to include your favorite condiment(s). For example, use smoked salmon and just eliminate the horseradish.
